Black Garlic is cured garlic aged under specialized conditions of heat and humidity for a duration of time. When the color has changed due to the Maillard reaction(Browning), a chemical reaction which rearranges the amino acids and sugars if the garlic. The cloves become almost black and the flavors are rich, sweet and tangy. Hints of balsamic vinegar, fig, molasses and Umami immediately come to mind.
